I was hungry the other night and Mark is out of town. What would be easy and satisfying? How many times have we asked ourselves this? I do not have to have a sit down hot meal every night. But I also cannot snack away a meal. I remembered the omelet Sidney made in the TV series “The Bear” and I thought I could do that! I had bought Boursin cheese at Costco and I gave it a go. I used three eggs the first time and I have made it since then with two. Here is my unofficial version.
- 3 eggs beaten with a small whisk or fork
- Salt and pepper
- Butter for pan
- ⅓ to ½ the Boursin package (I use spoon scoops, Sidney made a fancy roll shape)
- Chives cut finely on top (I had none and use parsley)
- Broken potato chips (pretty sure Chef used Pringles but any potato chip will do)
I use a small non- stick frying pan, put a hearty tablespoon of butter in the pan at medium high heat. When butter is melted, lower heat and pour eggs in. Now pull patience out of your apron pocket, let the eggs cook slowly. When you think you can flip the gently cooked flying saucer, flip it! Sprinkle with salt and pepper. And lay the cheese scoops on the gently cooked egg. Flip it in half (fold it over.) It is now a half circle or omelet shape. Slip it onto a small plate. Chop your chives or parsley and crumble potato chips over the whole deal. Enjoy and thanks Chefs!
