Dr. Gundry Cabbage Recipe
I never take pics of foods I make. I don't find it appealing. But I have been mentioned this recipe on Instagram and thought it might be easier to just post it here. It is from the book "The Keto Code" It is not beautiful to look at but tastes amazing.
Crispy Roasted Cabbage with Lemon Herb Pesto
1 head cabbage (any variety) cut into 8-10 wedges
3 tablespoons extra virgin Olive Oil
1/4 MCT oil (I do not know what that is--- I used olive oil)
Zest and juice of 1 lemon
2 Tbsp. grated Parmesan or Mancheco cheese or Nutritional Yeast (I used yeast)
1 garlic clove minced
1 Tbsp minced basil
1.Preheat oven to 425 degrees
2.On a baking sheet, toss the cabbage with 2 tbsp of the olive oil and the salt.
Spread into a single layer and bake for 8-10 minutes per side, turning once, until the cabbage is browned and crisp at the edges and tender all the way through.
3. While the cabbage is baking, in a small bowl, combine the remaining 1 tbsp of olive oil and the other oil LOL, lemon zest,,lemon juice and garlic.
4.Fold in the cheese or yeast, nuts and herbs ro make a chunky pesto...
5.Remove the cabbage from oven . Spoon the pesto onto the cabbage before serving. (I tossed it into the cabbage)
