Pao de Beijo Vegan Sweet Potato Snack Rolls

I usually make these rolls with cheese, they are a crowd pleaser and fun to bring to a party. I tried this recipe from Creative in My Kitchen. They are good, chewy inside and crispy on the outside. 

Ingredients

3 1/2 cups of cassava flour

3 1/2 cups of cooked sweet potato mash (I peeled and boiled them, you could also bake)

11 Tbsp olive oil

11 Tbsp water (warm)

1 tsp salt

1 tsp tumeric powder 

Instructions

1. Preheat oven to 400F

2. Combine the sweet potato, olive oil, water, salt and turmeric in a food processor until creamy

3. Transfer to a big mixing bowl and start adding cassava flour, first mix with spatula and when it gets hard start to knead with your hands. Keep adding cassava flour and knead for a few minutes. You will get a dough that is elastic. 

4. Form the dough into bars about the size of a golf ball.

5. Arrange them on parchment paper on a baking sheet and bake for about 30 minutes
